Red Wine Chocolate Sauce

Ingredients
1/2 bottle Sangiovese (Casa Rondena)
275ml port Animante (Casa Rondena)
1 Shallot, sliced lengthways
a few sprigs of Thyme
2 tsp cracked black pepper
4 pieces of bacon
3 tbsp Olive oil
20g dark chocolate, 70% cocoa solids
10g milk chocolate
2 tbsp unsalted Butter
1.5 cups chicken stock
To a med high sauce pan add olive oil and bacon til cone then add shallot cook until translucent add fresh thyme and cracked pepper cook about 4 mins. together then add wine and chicken stock reduce by half. Once reduced stir in chocolate and let the sauce continue to reduce and thicken kill the heat and stir in butter.
